Grilled Walleye or other Fish
Build charcoal fire on top of grill. Lots of charcoal, fire should be extremely HOT. You need a grill basket to clamp filets inside of. Prepare grill basket by spraying with PAM (TEFLON GRILL BASKETS ARE AVAILABLE), set aside.  Melt one half stick butter in microwave. Dry filets with towel then dredge in butter and place in basket. Season with Garlic, Pepper.  Nextsprinkle flour over filets sparingly to ad crispiness.  Attach baskettogether and turn it over. once again sprinkle with flour. When fire is extremely RED HOT Put basket right on coals. 3 Minutes each side. Use TeflonSpatula to remove from basket. 

Note: Season fish on one side only so not to over season it.  I prefer CAVENDER'S all purpose Greek Seasoning Availableby mail order only at:

This Cavender's is great on Chicken , in Fish batter, on Steaks or about anything. It's very inexpensive I highly recommend it.

Smoked Fish Marinade
The recipe I have is for a marinade for smoked fish...
It is simple to make and tastes great.

Combine 3 cups of apple juice, 1 cup of brown sugar and a cup of soy sauce.  Add 1 tsp. of garlic salt, onion salt, lemon pepper, and black pepper along with 3 Tbs. of salt. Add fillets and let marinade for 48 hours and smoke with hickory wood chips until done.

The Ultimate Barbecue Salmon Dinner
My recipe for BBQ Salmon is exquisitely simple!
I love the flavor of Salmon and don't like anything to interfere with it,
hence, the Ultimate Barbecue Salmon:
Ingredients Needed:
8 to 16 oz of FRESH Salmon (preferably Chinook or Coho) steaks per person depending on size and appetite of persons eating (I'm definitely a 16 ouncer!)
Salt
1-2 ears of fresh corn per person
Head of Lettuce
½ cup Mayonnaise
1/3 cup White Vinegar
2 medium tomatoes
3 green onions
2 Lemon quarters per person
Clean Barbecue Grill
Fat-Free Pan coating spray
Salmon Preparation Liberally salt Salmon Steaks and place them on clean grill that has been well sprayed with Fat- Free coating over a medium hot charcoal briquette fire. Grill should be about 3 inches above charcoal. Allow to cook for approximately two minutes then turn. Repeat every two minutes or so until fish is beginning to be flaky. Do not overcook. Salad Preparation Break lettuce into bite size pieces. Add diced tomatoes and thinly sliced onions and toss. Mix mayonnaise and vinegar thoroughly and pour over salad. Mix completely. Corn Preparation Place in ears of corn in a pan of boiling water and cook at rolling boil for approximately 15 minutes. Drain water. Serve Serve Salmon and corn HOT. Place lemon wedges on plate with fish, corn and salad, but I highly recommend trying the Salmon without the lemon first. I think you will enjoy the delicate unenhanced flavor of the fish.

Fisherman's BBQ (Tuna or Albacore)
Take four (or however many you need) thick steaks
from tuna or albacore.
They should be about 1 1/4" thick
(about as thick as a piece of bacon is wide),
 round in shape and about 3 1/2" in diameter. 
Wrap a piece of bacon around
the edge of each steak and secure with toothpicks.
Get a bottle of commercial teriyaki sauce of medium thickness-- not too thin because it just runs off--
 and coat the top and bottom of each steak with it.
Place the steaks on a medium hot BBQ and watch so that they don't catch on fire. Use more teriyaki sauce on them as you see fit. Turn the steaks once as they cook. 
They are usually done about right when the bacon is cooked to your liking.
 *This is a great, uncomplicated recipe that can be prepared quickly. It can either be "manly" or elegant, depending on your mood and the steaks taste equally good with wine .
