BOBO'S CAMP BREAKFAST
4 N.B. Rainbow Trout 1 lb. each. ( we have our own stocked pond)
Stuffing is as follows - Combine in a bowl:
2 cups cooked rice
2 tbsp of butter
1 cup fresh sliced mushrooms
1/2 cup grated carrot
1/4 cup diced celery
2 shallots chopped
1/2 tsp each of salt, parsley, thyme and marjoram.
Sprinkle cavity of trout with lemon juice and stuff each trout, to suture cavity we use either snare wire or heavy string. Place foil on BBQ Grill and grease foil with bacon grease if available. Brush trout lightly with oil. If you have fish basket then greasing foil not req'd., eh. It requires approx. 5to7 mins. cooking per inch thickness of trout, and turn only once. Set BBQ to high and if temp. gauge available around 400Deg. With fork test doneness, if ready flesh should comes easily away from backbone.....Serve with brown potato fries with cracked eggs on top of fries (8) place cover over pan cooking until whites are firm and yoke runs freely.

Egg in a Window
1 slice of bread
1 egg
butter
salt 
pepper
Take slice of bread and cut out center with a small cookie cutter or lid.  Melt small amount of butter in pan.  Place slice of bread into pan.  Crack the egg and put in the middle hole.  Cook until bottom is light brown and then turn over and cook until egg is done to your likeness.  You can top the egg in a window with you favorite jam or eat plain.  Hope you enjoy.

Vension Sausage & Gravy w/Homemade Biscuits
1 to 2 lbs. venison sausage
1/2 cup to 1 cup self-rising flour
Milk 
In a large skillet brown the venison sausage, when done add flour and let it simmer stiring constantly.  Add milk until you get it to the thickness desired.  Remember it will thicken so start out with thin and let it simmer until thickness of gravy you like.  While it is simmering I start my biscuits. 

Biscuits
2 cups self-rising flour
1/2 cup shortening
1 cup buttermilk or whole milk
Butter your favorite biscuit pan.  In a medium to large bowl add ingredientsl and stir with a spoon.  When mixture is ready I put on a floured cutting board and knead until ready to either roll out and cut or use hands.  I always break off enough dough and pat out my biscuits.  When all biscuits are in pan then place in preheated oven 400º and cook until golden brown.  I butter the tops of my biscuits with a stick of butter then split them open and add sausage gravy on top... ummmmmmhmmmmm good!
