Cooking with SusieQ: Venison Taco Soup

This is actually a Chicken Taco Soup recipe that I modified a few years ago for us when we were having the Chicken Taco soup one night and I asked my husband Danny what he thought it would be like with Venison instead of chicken. Danny loves meat so I always add two lbs but according to the original recipe it would call for just one pound ground venison and one 14 oz. can of diced or crushed tomatoes. I just feel like it needs a little more something so I add more crushed tomatoes for the extra ground venison. Enjoy.

 

Venison Taco Soup

  • 1 to 2 lbs. of ground venison
  • 1 (14 oz). can black beans 
  • 1 (14 oz) can corn
  • 1 (14 oz) can great northern beans
  • 1 (10 oz) can diced tomatoes & green chilies
  • 1 (28 oz) can diced or crushed tomatoes 
  • 1 package Taco Seasoning

 

Brown your ground venison and drain if you need to, then just add your; black beans, corn, great northern beans, tomatoes & green chilies, tomatoes and taco seasoning.  I always add one can of water from the crushed tomato can. Mix all ingredients and once starts to boil, simmer for at least 30 minutes.

 I added my 28 oz can of crushed tomatoes next. It is just a habit of mine to add the tomatoes first in a recipe to get the liquid going. It doesn't matter what order anything it added as long as you get it all in the pot.

Add Great northern beans diced tomatoes & green chilies… just about finished.

I just turned it off. It has been simmering for a good 30 minutes. Sure smells good. I can't wait to taste it today. We are having a cold rainy day here even though it is still Fall. It feels like Winter. I know this is just the thing we need today. I hope you will try this recipe and enjoy it.
