1 lb ground venison
3 tsp. sage
1 tsp. salt
3/4 tsp. black pepper
1 tsp. red pepper (if you don’t want it spicy I suggest you cut down on the red pepper)
Combine all ingredients in a bowl and mix well. Shape into any size sausage patties you would like and add to skillet to cook or you can freeze them to cook later. Very easy recipe… easy enough to adjust seasonings to what you like. If you like more sage flavor then add more sage, more spice add more red pepper or less. I suggest the first couple of times adjusting the seasonings to what you think you would like until you get your sausage the way you like it. Best of luck and enjoy!
ven-sausage2: I used my dough hook to mix up sausage. I still had to mix it by hand. Next time I think I will do two or three pounds at a time and it will all mix up just perfect with the dough hook. The great thing about using it is just let it keep going until you think it is ready. LOL I want to freeze some patties to cook as I need them.
